Mami's budín de pan

Bread pudding, Mami's way — nothing wasted, everything loved.

Mami's budín de pan, Puerto Rican bread pudding
budín de pan

Here's our Puerto Rican version of bread pudding but honestly, it's more like a fruit cake, a moistier one at that. It's a holiday favorite that was passed down from my grandmother and mother, with some creative adjustments along the way! My ‘boys' really love this one! When I was a kid, my mom would store bread that had been getting stale in the frig. Once she accumulated enough, she would pull out the grater and a big bowl, and someone (me?) would have to grate the bread. I often thought that there were some additional human ingredients in the mix. Fortunately, we now have food processors that do the work in a fraction of the time! That said, I really loved when my son would step up and do the grating while I prepped.

§ Ingredients

Yields 10–12 servings

  • 1 loaf of sliced white bread (20-22 oz)
  • 2 cans of evaporated milk
  • 2 cups of granulated sugar
  • 1 can (12 oz) of Fruit Cocktail with its syrup
  • ½ cup of raisins (I prefer golden raisins)
  • 5 cloves
  • 1 ½ to 2 tablespoons of cinnamon
  • 2 ounces of vanilla
  • Butter-flavored Pam or Crisco

§ Instructions · Let's get cooking

  1. 01Grate the bread a few slices at a time in the food processor.
  2. 02Place the grated bread in a large mixing bowl.
  3. 03Add the 2 cans of evaporated milk and mix well by hand.
  4. 04Blend in the sugar.
  5. 05Add the fruit cocktail with syrup, raisins, cloves, and vanilla – mix well.
  6. 06Once your ingredients are blended, use the hand mixer to make certain all your ingredients are thoroughly mixed in.
  7. 07Mix about 2 to 3 minutes.
  8. 08Meanwhile, pre-heat the oven to 350˚
  9. 09Spray or coat your bundt pan generously and evenly with butter Pam or your preference. Pour the mixture into the pan evenly – leaving about 1" for the budin to rise. (I favor a bundt pan.)
  10. 10Bake at 350˚ for 1 hour.
  11. 11Check to see if it's done with a toothpick.
  12. 12Let cool for 5 minutes before turning it onto a plate.
  13. 13Serve at room temperature or chilled.

¡Buen provecho!
