Fried rice with salmon

Leftover rice, fresh salmon, and whatever the garden gave that morning.

Fried rice with salmon, Puerto Rican and Chinese fusion
arroz frito con salmón

Get ready for a flavor explosion with this tasty dish of rice infused with lively Puerto Rican and Chinese seasonings! The fluffy grains of rice soak up the bold flavors of sofrito and Adobo mingled with soy sauce, garlic, ginger, and green onions, transforming a simple side dish into a vibrant and mouthwatering sensation. You can start with previously cooked white rice* and add it to the sautéed seasonings. My preference is to start from scratch, but shortcuts come in handy when time is limited.

§ Ingredients

  • 2 cups of rice (Mahatma Jasmine rice is my favorite)
  • 2 tablespoons of oil
  • 2 tablespoons of salt (less if preferred)
  • 2 eggs, beaten
  • ¼ cup soy sauce
  • ½ small yellow onion, finely diced
  • ½ red pepper, finely diced
  • 3 garlic cloves, finely diced
  • Cilantro – about 2 leaves finely diced
  • 1 teaspoon of sofrito
  • ¼ teaspoon of ground ginger
  • ½ package of Fried Rice Seasoning (this enhances the flavors)
  • 2 lbs. Salmon filet
  • 3 tablespoons olive oil
  • 5 cloves of finely minced garlic
  • 2 tablespoons butter
  • Salt, pepper, and/or adobo to taste

§ Instructions · Let's get cooking

  1. 01In a bowl, mix 1 cup of water, ¼ cup of soy sauce, salt, and fried rice seasoning.
  2. 02Heat oil in a Dutch oven or large saucepan.
  3. 03Whip and fry eggs quickly; remove and set aside.
  4. 04Sauté onion, garlic, cilantro, sofrito, and pepper until translucent.
  5. 05Add the water mixture and bring to a boil.
  6. 06Stir in rice, ensuring even blending.
  7. 07Reduce heat, let the water evaporate until small air pockets form
  8. 08Cover and cook for about 15 – 20 minutes.
  9. 09Stir again and cook for another 15-20 minutes until rice is fluffy. The rice grains split when fully cooked.
  10. 10Preheat oven to 350°F.
  11. 11Line a baking pan with heavy-duty foil.
  12. 12Heat oil and lightly brown minced garlic. Season the salmon with salt pepper and adobo.
  13. 13Add another layer of foil, sufficient to loosely wrap the salmon
  14. 14Place the salmon on the 2nd layer of foil
  15. 15Drizzle the oil evenly on the foil.
  16. 16Meanwhile add butter to the garlic, stirring as it quickly melts.
  17. 17Pour the garlic butter over the salmon
  18. 18Wrap the salmon loosely in the foil, allowing space for air circulation
  19. 19Bake for approximately 35 minutes.

¡Buen provecho!

Sofrito — the base of everything

sofrito · Puerto Rican seasoning base

Not a sauce. The secret weapon. Make a big batch and give half of it away — that is the whole tradition in one jar.
